D2 Steel Items

D2 tool steel is the workhorse of professional kitchen blades — a high-carbon, semi-stainless steel renowned for exceptional edge retention, abrasion resistance, and toughness under repeated chopping.

Unlike Damascus (which is pattern-welded from multiple steel types), D2 is a single-billet tool steel with around 1.5% carbon and 12% chromium, giving each blade a clean satin finish and the kind of working-life that bench cooks and butchers measure in years rather than months.

  • Edge holding — D2 keeps a working edge for far longer between sharpenings than the typical 420/440 stainless used in cheaper kitchen knives.

Care notes

D2 is "semi-stainless" — keep it dry and oiled. After every wash, dry the blade thoroughly and wipe a thin film of mineral or food-grade camellia oil along the steel before storing. Never put a D2 blade through the dishwasher; the long water immersion plus alkaline detergent will pit the steel.
